Interesting dishes, but precise measurements for the ingredients aren't given. Yes, I cook that way myself ...just estimating amount of ingredients. But if the exact flavor is stressed as being important, it would be nice to hear "1/2 a teaspoon of this" or "1/4 cup of that" with specifics instead of watching him pour the ingredients from an unmarked glass or grab a bit of spice without telling us how much.
