A bit too scant on the science. After finishing this course, I didn't find that I could make informed decisions on the advantages or disadvantages of different ingredients, and thus healthy cooking. If I were to encounter ingredients not mentioned in the course, I don't think I could make a decision on whether it would be a good addition to my diet or not. Some nice recipes, however.
