Lecture no. 1 from the course: The Everyday Gourmet: The Joy of Mediterranean Cooking

Tastes of the Mediterranean

Taught by Professor Bill Briwa | 34 min | Categories: The Great Courses Plus Online Food & Wine Courses

What is Mediterranean cooking? Start your exploration by learning to cook some of the small dishes that populate menus around the region. Watch as Chef Bill Briwa creates pinchos morunos, or skewered food in the style of the Moors; a brandade of salt cod, which is popular in many Mediterranean countries; and dolmas stuffed with rice.

I think that these look great and surprisingly easier to do than I expected. I also like the occasional tip, such as potatoes becoming "gluey" if mixed too much. The only thing I think could make this video better is if Chef Briwa said from the beginning of each lecture what he would make, or give a brief recap of the dishes cooked at the end of the lecture.
